I love experimenting with different cuisines, and lately, I've been obsessed with making homemade tacos! They're super versatile, and I’d love to hear your favorite fillings or salsas. If you have a great recipe for seasoning or toppings, please share!
 
I like my tacos' basics with fresh avocado slices, tomato, sour cream, and Walmart Cantina salsa.

Crispy oven baked chicken wings. Great recipe from thekitchengirl dot com.
No flour, baking powder, or baking soda needed to achieve crispy results!

2# of chicken wings yields 6 drummies and 6 flats, and is enough for my wife and me when adding a cob of buttered corn and six asparagus spears finished in butter spiced with a dash of black pepper and garlic powder.

It is very important to dry the chicken pieces to get them real crispy.

I adjust the oven rack to #2 position from bottom and #2 position from top; then, preheat the oven to 425 and lowering the temp to 400 when I put the wings on the bottom rack. I flip them after 30 minutes and and put them on the second rack from the top for another 15 minutes. I turn off the oven and flip them again, returning them to the top rack for re-crisp them.

My wife likes them as spiced by recipe without a sauce. I like them with the HFCS free Stubbs Original Sauce.

Serve with your favorite sauces. Bon appetit
 
I've been working on finding a good pizza recipe for my friend who has been eating frozen dinners since his wife passed nearly a year ago. We'd meet every other week to try a new style pizza, dough and sauce recipe. He liked a thicker crust but not a real thick one. He also wanted it simple to make and easy to clean up.

Eventually, we settled on Brian Lagerstrom's One Hour Pan Pizza recipe for the dough.
To minimize the rise, we used Brian's 10-inch pizza dough recipe (1 packet of yeast was fine) for our 12-inch cast iron fry pan and we used all purpose flour rather than bread flour.
We made a simple pizza sauce with a 8oz can of tomato sauce with onion & garlic, 2.5 Tbs tomato paste,1/4 tsp dry oregano, 1 tsp salt, 2.5 tsp sugar blended.
We loaded it with a Johnsville Sweet Italian Sausage link (removed from the casing and pinched off into bite size pieces), a dozen Hormel pepperoni slices, and big handful of canned mushrooms (liquid squeezed out).
We shredded our own whole milk mozzarella cheese (1/2#) and added an ounce of white cheddar to the mix.

A good pie that feeds two hungry guys. It pairs well with a salad and fresh fruit to finish.

My wife gave me an electric smoker for my birthday, replacing my ancient charcoal smoker. Smoking was normally a weekend affair.

Yesterday I surprised her with smoked chicken thighs for dinner. After 6 hours in a simple marinade (olive oil + Pampered Chef Garlic & Herb seasoning), 3 hours in the smoker at 225 F, then 10 minutes in the oven at 450 F to crisp the skin.
