I've been working on finding a good pizza recipe for my friend who has been eating frozen dinners since his wife passed nearly a year ago. We'd meet every other week to try a new style pizza, dough and sauce recipe. He liked a thicker crust but not a real thick one. He also wanted it simple to make and easy to clean up.
Eventually, we settled on Brian Lagerstrom's One Hour Pan Pizza recipe for the dough.
To minimize the rise, we used Brian's 10-inch pizza dough recipe (1 packet of yeast was fine) for our 12-inch cast iron fry pan and we used all purpose flour rather than bread flour.
We made a simple pizza sauce with a 8oz can of tomato sauce with onion & garlic, 2.5 Tbs tomato paste,1/4 tsp dry oregano, 1 tsp salt, 2.5 tsp sugar blended.
We loaded it with a Johnsville Sweet Italian Sausage link (removed from the casing and pinched off into bite size pieces), a dozen Hormel pepperoni slices, and big handful of canned mushrooms (liquid squeezed out).
We shredded our own whole milk mozzarella cheese (1/2#) and added an ounce of white cheddar to the mix.
A good pie that feeds two hungry guys. It pairs well with a salad and fresh fruit to finish.
