I’m looking to buy new grips for my 1911 and would appreciate some recommendations on brands or materials. I’m mainly deciding between something durable like G10 or a more classic wood style, so I’d love to hear what others prefer and why.
 
G10 grips grip everything, including your shirt,wood grips just quietly remind you why the 1911 is timeless.
 
Look at VZ grips. Most are a laminate, nearly indestructible material and several designs offer a range of texture. Plus, if it's a little too aggressive a texture for you, a few minutes with sandpaper can tone it down.
Here are some on a 'Basic GI' project I did a few years back on a .38 Super. I wanted the grips to look like the old style GI 'double diamond' wood grips, but needed more texture and durability. These were what VZ called 'Cherrywood'. Worked out well.
